A New Blog for YOU

As a companion to this blog, I've started www.aplaceofsaving.blogspot.com for those of you interested in money-saving tips. I am by no means an expert, so I will need lots of input for this one. I just thought if anyone comes across a great deal locally, they can share it with me either via e-mail or comment on the blog and I can get the word out. I'm slowly learning about couponing and this week went to the store and saved $30.00 using coupons, but I know some women do much better than that. Some even have money given back to them I've heard. So if you have any tips you can share that would enlighten the rest of us, please do so!

Recipe

The Young Women attended a Sleepover at Sister Shaw's house last weekend (And thanks for sending my young woman home crabby, by the way-they were up until 5:00 a.m.)...anyway, I sent a recipe with Svetlana that the girls enjoyed so I thought I would share it here, REALLY SIMPLE DIP

1- 8 oz. pkg. 1/3 less fat cream cheese
1/4 cup pesto (I used the premade kind purchased in a small jar by the spaghetti)
1/4 cup Italian Cheese Blend
1/4 cup fresh diced tomatoes

Put the cream cheese in a small baking dish, spread with the pesto, then sprinkle with cheese and diced tomatoes, season with salt and pepper. Bake at 350 degrees until cheese melts. Serve with crackers-the best to use are Triscuits Cracked Pepper and Olive Oil.

A New and Healthier You

Last night was our first Additional Relief Society Meeting "A New and Healthier You". A Big "Thank You" goes out to our speakers-Sister Jamie Lorenc, and Sister Gaylynn Crosby.
Sister Lorenc showed us some great beginner Yoga moves. These are great to relieve stress, improve posture, and relieve joint and back pain. She is willing to work with any of our sisters with individual work-outs, contact her for more information.
Sister Crosby spoke about a great resource that is FREE...www.sparkpeople.com. On this website you can calculate your needed daily caloric intake, enter any recipe to find the number of calories per serving, journal your daily food intake, and many other great hints, tips, and help. She also encouraged us to make goals and write them down. She also recommended the following books: "The Culprit and the Cure" by Steven Aldana (this is available on ebay for $1.00 plus $3.99 s/h or on www.alibris.com for 1.99 plus 3.99 s/h). Another book she suggested we read is "The End of Overeating" by Dr. David A. Kessler available on ebay for 15.97 with free shipping.
Jennifer Brown is forming the New and Healthier You small groups. These are groups that will meet once a month to track your success, give encouragement, etc. The best way to get in shape is by doing it together. Please contact her if you are interested in becoming a part of a small group. The first meeting will be Thursday February 25th time to be announced.
Thank you also to the ladies who brought healthy snacks for us to partake. They were all delicious. We had tortilla pinwheels, shrimp cocktail, fresh veggies and dip, fruit kebabs, hummus with bagel chips and crackers, weight watcher cookie bites, angel food strawberry cupcakes, green smoothies, and a mushroom-tomato-onion spread with sliced baguette.
Thank you to everyone who participated, and let's all make our bodies a place of holiness by treating them like the temples that they are.

Chicken Enchilada Recipe

Thank you to everyone who came to help us prepare meals for our Compassionate Service Needs. Below is the recipe that was prepared at Sister Miller's home-Chicken Enchiladas. The other two recipes will be posted when I get them ;).
Chicken Enchiladas
Red Enchiladas Sauce- Recipe makes 3 cups and cost the same as one can of the store bought sauce.
• Enchilada Sauce:
• 2 tablespoons CRISCO® Oil
• 2 tablespoons all-purpose flour
• 1 tablespoon chili powder
• 1 teaspoon ground cumin
• 1 (14 ounce) can chicken broth
• 1 (8 ounce) can tomato sauce
• 1 teaspoon salt
• 1/4 teaspoon garlic powder
Enchilada Sauce: Heat CRISCO® Oil in large saucepan; stir in flour and chili powder. Cook for 1 minute. Add remaining ingredients, bring to boil, and simmer for 10 minutes. Makes three cups of sauce
Enchiladas-

• 2pounds skinless, boneless chicken breast meat - cut into chunks
• 1 1/4 cups sour cream
• 1/4 teaspoon chili powder
• 1 tablespoon butter
• 1 small onion, chopped
• 1 (4 ounce) can chopped green chilies, drained
• 1 (1.25 ounce) package mild taco seasoning mix
• 3/4 cup water
• 1 teaspoon lime juice
• 1/2 teaspoon onion powder
• 1/2 teaspoon garlic powder
• 12 (12 inch) flour tortillas
• 3 cups Cheddar cheese, shredded, divided
• 3-4 green onions, chopped
• 1 can enchilada sauce – Replace with the homemade sauce (1 1/4 cup)
• 1 (6 ounce) can sliced black olives
Place chicken in saucepan with enough water to cover. Cook chicken, cool and shred. Heat the butter in a skillet, cook and stir the onion until done. Add the shredded chicken, green chilis and taco seasoning and water. Allow to simmer for 10 minutes. Remove from heat and stir in the lime juice, onion powder, chili powder, and sour cream.
Preheat the oven to 350 degrees. Pour other ½ cup of enchiladas sauce on the bottom of the 9x13 baking dish.
Fill each tortilla with the chicken mixture. Spread cheese over the chicken filling, roll and place in baking dish.
Pour 3/4 cup enchiladas sauce over the enchiladas. Cover with remaining 1 ½ cup cheese. Sprinkle with green olives and green onions. Bake for about 25 minutes until filling is hot and cheese bubbling.
